DESCRIPTION

Maltose, consisting of 2 molecules of glucose in an α-1,4 linkage, is the major disaccharide formed from hydrolysis of starch in food. It is a key sugar used in the brewing and fermentation industries where yeast converts it to ethanol and CO2. It is broken down by α-glucosidase and unlike other disaccharides only gives rise to glucose. AkrivisBio’s Maltose Assay is a simple, sensitive means of measuring maltose in a variety of samples with a sensitivity below 1 nanomole colorimetrically and in the low picomole range when measured fluorometrically.
