DESCRIPTION

Tyrosinase plays a major role in melanin biosynthesis, the pigment found in hair, skin and eyes. Melanin serves as a natural antioxidant, protecting cells from damage due to free radicals and UV light.  Tyrosinase is of commercial and pharmaceutical interest due to its role in browning reactions in skin pigmentation as well as its effects on the ripening process in fruits and vegetables. Since tyrosine, the primary tyrosinase substrate is a precursor to neurotransmitters like dopamine and norepinephrine, tyrosinase affects neurotransmitter regulation. Some commercial applications of tyrosinase include browning of fruits and vegetables, hair and fabric dyes, phenol removal in wastewater treatment, flavor enhancement in teas and phenol detection in biomedical applications.
